
Quick and easy salmon stir fry recipe
This healthy and gluten free recipe is full of flavour with juicy salmon fillets and a range of colourful vegetables. It uses rice noodles and tamari (gluten free soy sauce) so is tasty and suitable for Coeliacs!
What you'll need
- 4 salmon fillets
- 2 tsp Chinese five-spice
- 250g dried rice noodles
- 1 red pepper
- 10 spring onions
- 140g mangetout
- 1 tsp garlic granules
- 1 tsp ground ginger
- 200g baby sweetcorn
- 6 tbsp Tamari sauce (GF soy sauce)
Cooking directions

To begin, deseed and slice your pepper, slice the spring onions and cut the mangetout in half

Sprinkle the five-spice over the salmon and grill the salmon fillets for 12 minutes

Meanwhile, cook the noodles according to on-pack instructions
4.
Place a wok over a high heat and add a spray of low calorie cooking spray
5.
Add the red pepper, spring onions, mangetout, sweetcorn, garlic and ginger. Stir-fry for 8 minutes
6.
Add the noodles and stir-fry for a further 2 minutes
7.
Once the salmon fillets are cooked, break into small pieces and mix into the stir-fry
